The subject of what we put in our mouths is far too heavy to take it too seriously! As I shared in my previous post, its a day by day personal choice for me to eat fresh and clean food.
The vegan diet has a myth that there is nothing else to eat but salad. So I decided to make a list and collected pictures of what I'm usually eating throughout the day. Personally I don't weigh, measure or count calories of my food. Anyway, I hope you enjoy!
I usually don't have much to eat in the mornings; I mix this vegan muesli in a large container and keep it ready to eat. Also making a large amount of smoothie is useful later when I can have it at lunch or dinner.
Self mixed muesli: organic popped amaranth, organic oatmeal, organic chia seeds and matcha green tea powder. Topped with organic goji berries. Soaked with organic rice and almond milk.
Green smoothie: orange, apple, carrots, kale, spinach and cucumber.
Multivitamin pills: Fruit and vegetables extracts
Mid morning snack
Im a Starbucks addict! A soy-latte grande is my kick for the day. I also would have a mix of nuts and a couple of bananas at mid morning.
I drink the remaining half of the protein shake and I normally pick up a mix of vegetables, lentils, quinoa and tofu from a great buffet at a vegetarian/vegan restaurant on my way back to work, or I would just drink the rest of the smoothie made in the morning.
A couple of organic full grain rice waffles with organic crunchy peanut butter, #yummy!
I would have a tofu salad and the rest of a smoothie. Or full grain pasta with a home made pesto, but now I'll share the best Hummus recipe ever! Wrapped in a whole grain tortilla with red pepper and avocado.
Eating vegan just feels right for me and when something feels right you just have to keep doing it, right?
