Some people - when they get to know I am vegan - have asked me curiously about what groceries I get. The general idea is that it should be difficult to know what to buy when you follow a plant based diet. So I want to share a few tips that have helped me make my life easier (and healthier).
In any day of the week, I don’t have to much time to spend cooking the perfect dinner or being stuck at the grocery store starving at 6PM, when all I want to do is be home. A good planed groceries list gives you a hand on a everyday meal success; let these three tips help you as they have helped me getting my weekly groceries done.
1. Write it down
First things first, where to do a shopping list. I find it easier to do it on my phone, that helps me keep the list organised instead of a piece of paper that I always end up loosing or forgetting. "Get me a pie" app, lets you add people to the same list and or share it.
2. Fresh first
My groceries list consists in mostly fruits and vegetables, I sweep the fresh section of the super market choosing mostly all organic fruit and veggies that I can find! I use most of the fresh fruits and veggies on my everyday smoothie. Oranges, bananas, kale and cucumber fit to almost every smoothie, here are the basic recipes for my green juice or smoothie.
For dinner I use vegetables i can quickly chop and mix on a salad, roast in the oven or grill in a pan. May sound boring, but get a few very flexible recipes that use similar ingredients, like a quinoa salad which you can prepare enough for a couple of days. Peppers, carrots, tomatoes and avocados are very versatile. Mix them into a quinoa or lentils salad, or do a guacamole, fry the peppers and roll them into a tortilla, or mix the tomatoes with some basil and tofu for an Italian Caprese salad. Or spread the avocado on a black bread with some peanut butter and you got a simple yummy dinner.
3. Cover your basic ingredients
You’ve got your simple recipes, now it’s time to stock your kitchen. I make sure I have enough nuts, lentils and quinoa in my pantry, whole grain pasta, tortillas, also nut milk can't be missing in my fridge! Canned beans and chickpeas are also great to have to spread on a tortilla with some grilled vegetables - here my favourite hummus recipe.
I visit the supermarket once on the week and another time on the weekend, before heading out to the grocery store writing down everything I need has made my life easier. Hope this tips can help you too, happy shopping!
